槟城美食:Jalan Transfer 的Mamak 档和Nasi Padang

一直以来我鲜少品尝马来美食,最多也是去一些Mamak档。记得在2011年的时候和一班博客出游时,就来到了位于Transfer Road路边的Mamak档。Mamak的Nasi Kandar这种扁担饭在很老的时代就已经出现,当时候的Mamak(印裔回族)会挑着扁担来卖饭,其咖喱风味偏北印度,与马来人的咖喱煮法不同。过后,他们转换了经营方式,在街边/店屋经营Nasi Kandar,而我们才把他称为Mamak 档。

当你嗅到浓浓的咖喱香气,看到各款红彤彤的咖喱正在柜子上飞舞,工人身手敏捷混了几十种的咖喱汁在你的饭内,那就是美味的Nasi Kandar。街边搭起的小木屋,或是在茶餐室,这种印度回民的美食可说是无处不在。有时候我很好奇,到底他有什么魅力,为什么可以吸引大批顾客前去光顾。我个人比较少吃Nasi Kandar, 不过如果你问我乔治市内有哪些出名的Nasi Kandar,那你就不能错过这家老招牌了!

槟城美食日记:来吃Mamak炒面!Mee Goreng @ Bangkok

在多元文化的国度里,槟城充满了各种文化的美食,单说本地的Mamak 炒面就有与众不同之处,除了熟悉的原料,豆芽、马铃薯、鱼饼、蛋及豆腐以外,在炒面中加入鱿鱼,这就是令槟城炒面一枝独秀的独门秘方。


这一档位于BangkokLane的Seng Lee Cafe。目前由Mahboob Zakaria经营的炒面原来是传承了家族的手艺,而且已经有80年历史之久。来到了摊子,我一举起相机,老板就以流畅的福建话和我交谈,还告诉员工好好炒,以方便我拍照。看来,老板已经习惯了吧?相信他也已经面对过无数的镜头。

我曾经在双溪大年的Institusi Perguruan Sulan Abdul Halim上了四年的课,由于我修读的是假期师训,每天几乎都是从早读到晚,每次都匆匆忙忙吃了便回去上课,根本就没时间去品尝美食。双溪大年属于一个小镇,也没有什么旅游胜地,也许是这样很少人报导双溪大年的美食。其实,这里也有值得推荐的美食,甚至可以媲美槟城。
