甜品…给人甜甜的感觉

I like desserts and every time I have desserts I cant help but feel a sense of joy as it reminds me of my childhood days as well.

The concept store that I mentioned earlier has finally arrived. Dragon brand will launch a dessert cafe concept this August which will offer a variety of bird’s nest and Hong Kong desserts prepared by a renowned chef.

It is a concept to mark Dragon Brand 53th anniversary this October. Stay tuned for its launch and i will blog about the desserts in my next few posts.

Recently I was asked the question of why do we double-boil bird’s nest instead of just boiling it? I think its an interesting topic to explore. First, I think that just by boiling the bird’s nest, without going through the tedious slow double-boiling process, can also enable the bird’s nest to be ready for consumption. But then we will proceed to the question of whether that is the best way to prepare the bird’s nest for consumption. I think we will want to get the most out of the prized bird’s nest right? so the answer is, I suggested, double boiling is still the best way to go. The reason, mainly, is because to avoid direct heat on the bird’s nest to prevent the nutrients and minerals to be lost in the process. That is why double-boiling is employed as heat is first come into contact with the second layer of the pot before warming the water that is between the inner pot. So in that case, the taste and aroma will be contained within the inner pot, releasing slowly through time.

Ever wondered how bird’s nest got into a bottle???

Allow me to show you the process

1) Weigh the bird’s nest and put them in a glass bottle.

2) Pass it through the machine conveyor belt for the rock sugar solution to be dispensed.

3) Then the caps are on their way to cap the bottle.

4) Voila! the bottled bird’s nest are ready to enter “The Oven” afterwhich, it will be on its way to the packaging segment.

Bird’s Nest Desserts

I was served a good combination of bird’s nest dessert with new year cake (literal translation from Mandarin), and black sesame in green tea roll. 16022008325.jpg

This is a combination of bird’s nest, pear, wolfberry and dried longan.

Can see that the bird’s nest are generously served which I really appreciate the renowned chef for coming out with such a great dessert for the restaurant’s customers!

所谓的燕饼 – Bird’s Nest Biscuits

These bird’s nest biscuits originates from Kuching and are “Man-made” as they do not come in these shapes naturally. They are formed by strands and bits of bird’s nest put together in a mould. This is quite labour intensive and requires experienced hands to put them together nicely.

As bird’s nest has natural adhesive qualities, the strands are able to be held together and will firm up in its shape after it is left to dry. Although it requires manual labour to put them together, these bird’s nest biscuits do not fetch high prices due to the quality of the bird’s nest strands and the size it can expand up to after soaking in water for about an hour. The double-boiling method employed to cook these bird’s nest is the same as the rest but one has to take note of the time it is placed in the slow cooker as the bird’s nest might evaporates after a short time due to the difference in quality.
