10 21st, 2009记得那个“全新加坡最好吃的榴莲泡芙”？
约了住在东海岸的著名化妆师李嵩，一起去泡一下芙！因为他上次留言说：“yum yum”。
迷你榴莲泡芙原价$11一盒（内有20个)，现在到圣诞节为止，有特价买3盒，每一盒$10。
重点是要好吃。
这是15年前Puteri Mas的老板Irene起家的糕点，她喜欢在厨房研究，还考了烘饼证书，做出了这一个个重质有份量的榴莲泡芙。选用的是D24，榴莲馅充实但是不腻，特别是泡芙本身很‘轻’~~~
所以我说她家的榴莲泡芙是rich but light！
想起尤今女士做的香蕉蛋糕也是很轻！功夫在…？许多食品的制作工序都机械化了，她的也全机械化？或半机械半人工？还是全手工？答案是一半一半。
mini durian puff
也尝了迷你内卷榴莲馅蛋糕，mini durian swiss rolls 13个售价$10。
我是爱吃泡芙和内卷馅蛋糕的人，这两样让我满意满足。蛋`面粉`糖一定要打的够，才做得出这个入口松软，入口即化的海绵蛋糕，嘿嘿，不知道我拍出它的好吃吗？
Irene是娘惹，妈妈教她做娘惹糕，Apom Berkuah是传统的娘惹kueh kueh。Apom就是一种kueh，特别指有‘洞洞’的kueh！而kuah是sauce，Berkuah，即added with sauce!
因为kueh做的够软，有‘呼吸的空间’，才有‘洞洞’，才是对的。
还有，那个sauce啊！它是香蕉口味的，以gula melaka制成，浓郁椰糖的香，但是清香而不是甜腻。
ya，为什么叫Puteri Mas ?什么意思呢？就是golden princess！Irene 说她最小的孩子是女儿，她又爱女孩子！就是这么简单的道理。而她和儿子Regan是那么像一对姐弟！从Regan的肢体语言，看得出他们一家感情很好！

Hi Anna, Puter Mas have been in market for quiet some time, I eat this puff for years, I think they have one small stall in Suntec city some where near to factory donut. But I not sure where still there or not. If ppl find that Joo Chiat is far.

I used to eat the puff, this round I purpose go suntec city there to bought one box of puff and one box of swiss roll, cause I haven try the swiss roll yet. After taste my husband and son like the swiss roll very much, thanks for bring back my memories… =)

Hi Anna,
Puteri Mas sell one of the best durian puff. I use to buy 2-3boxes whenever i visit Joo Chiat in the past. But price has increased a fair bit since then….
The aprom look very delicious…!

Just back from Suntec City. Had wanted to try the Apom at Puteri Mas, but they don’t sell Apom at the Suntec outlet. They cakes look very nice. I wasn’t able to buy any durian swiss or puffs because I am still recovering from cough.
